发的面总是有点黄,怎么回事?

就是放了发酵粉和baking powder. 味道还行,就是颜色看上去不如店里卖的。

那位XDJM有经验?

Don't put any baking powder, use milk instead of water.

yeast is enough, no baking powder, wait for enough time

I tried once without any baking powder and it is still yellow...

will try milk the next time. will it increase or decrease time for yeast to be effective?

Milk should help.  Wont affect the fermentation time.

Don't see any obvious effect on yeast when changed water to milk. The color may related to the flour you used. I used unbleached flour and bread flour before, neither of them were white enough. After changed flour to bleached one (bluebird from Fry's), got snow white steamed bun.

    I tried the regular without baking powder & bleached with baking powder. both came up with yellowish.


    next time will try bleached without baking powder but with milk.
