7 分钟做条称霸朋友圈的鱼,解秘 22 年老店的招牌菜 | 有故事的小饭馆

上海。武康路上有个小饭馆叫东欣酒家,已经开了 22 年。


老板四川人,大家都叫他小梁。94 年他背了一床棉被和一筐白煮蛋从老家来到上海闯荡,从打工仔到餐厅老板,他的创业路可谓一路开挂,各种贵人相助。


第一个贵人是教他电焊的师傅。


刚来上海,他在佘山的工地搬砖,后来学会了电焊,师傅把他从郊区的佘山带到了市中心的武康路。小梁脑瓜子活络,在接电焊之余,存了点钱在安福路永乐宫和话剧中心门口卖盒饭。再存了点钱就盘了一个饭馆,就是现在的东欣酒家。

在《一人食餐厅》里介绍过,这家小饭馆曾是艾格老师的食堂,也是话剧中心与上海戏剧学院一众人的食堂。


第二位贵人是扬子饭店的童富云大厨。

东欣卖了 22 年的招牌菜,是一条炝鲈鱼。按平均每天 20 条算,22 年大约已经卖出 160600 条。这道炝鲈鱼,就是童大厨亲自传授的。

炝鲈鱼的火候掌握得刚刚好,肉质细嫩皎洁,蘸一点汤汁,大赞。


小梁得到这个方子,一分钱都没花。


童大厨觉得小梁聪明好学,就手把手从片鱼开始教。教完后大厨闷声不响上门巡视厨房好几次,每次都看到厨师操作一板一眼,很满意,于是又教了几道菜,依旧分文未收。

店里的鳝丝,做的也相当好。


研究员写过东欣酒家后,有一次再去吃,被梁老板认出来,他说可以教这个炝鲈鱼方子,想不想学?

解密一家 22 年老店的招牌菜




研习了这个方子,简单,好吃,但端上桌显得很厉害。童大厨当年特意挑出来教小梁,看得出,他真是很周到的人。


十分简单,只要三步:

1. 煮酱汁。

2. 烫鲈鱼。

3. 把热油浇到鱼身上去。

Plus : 轻松制霸朋友圈。要不是晒了朋友圈自己都不信:这是一个新手 5 分钟做出来的鲈鱼。


去菜场买哪些菜? 

  • 1 斤到 1 斤 2 两的鲈鱼一条,这个份量的鱼,肉质肥美。

  • 京葱 1 根、青椒 1 个、红椒 1 个(切丝摆盘),鸡蛋 1 个,姜 1 小块拍碎泡水。

  • 李锦记蒸鱼豉油 1 瓶。如下图备一盘蔬菜,给蒸鱼豉油提鲜用:西芹半根,胡萝卜拇指长 1 段,京葱 1 段、洋葱 1/6 个,香菜2-3 根。蔬菜形状随便切,不重要。嫌麻烦的话只用蒸鱼豉油也是可以,但自己熬的酱汁味道就是比较厉害!试试嘛~

东欣是自己片鱼的,我们的方法是……在菜场让鱼贩片!片法在文章最后,鱼贩师傅一看就懂,实在不行塞他五块钱小费,保管行。这是菜场回来的成果:鱼头、鱼尾、去骨片好的鱼身。


鱼肉用水冲干净,放入生姜水 1 瓷勺(刚才不是让你把一小块姜拍碎泡水吗?这就是生姜水)。


小心地对半敲开鸡蛋,倒 1/4 蛋清进去。


再加盐 1 调料勺(约 3 克),淀粉 1 调料勺,用调料勺撒勺尖一点分量的白胡椒粉,用手仔细抓匀,大约是鱼片上面有层滑滑的粉。调料勺是很好的家用厨房计量单位,不论什么品牌的调料勺,一平勺盐大约都是 3 克左右。

把之前准备好的蔬菜倒进小奶锅里,加水刚刚没过蔬菜,再按 1/3 水的分量加蒸鱼豉油,煮开至冒泡即可关火。我厨房里备的是雪平锅,当小奶锅用也挺方便的。(主要是美貌,研究员承认。)


东欣的蒸鱼豉油配方,小梁没有公开。问了没事干研究院的金牌指导、中国烹饪大师毛水生老师,他给了个精准的配方,酱汁中带着蔬菜的回甘,确实非常鲜,感觉更厉害了!

取一个鱼盘,倒入熬好的蒸鱼豉油,铺满盘底。


锅内放 1 升水,放两片姜,大火烧开,下入鱼头、鱼尾煮至变色后捞出——这步大概 1 分钟。然后把头和尾分别放在盘子的两头。


还是这口锅,不用关火,等水再沸腾时下鱼片汆烫,变白后就用漏勺捞出,这步大约 30-40 秒。把鱼片放在鱼头和鱼尾之间,进度条推进到 90% 。


还差最后一步,熬热油。

取一个干净的锅,放大约12克油(1瓷勺),等油热,直接浇在鱼肉的表面。

课后练习题一:片鱼

可以请鱼贩师傅代做,也可以央求母上大人代劳。但亲手试一下,你会发现没这么难!


鲈鱼剖洗干净,先竖刀切去鱼尾,然后来切鱼头:贴着鱼鳍斜切下刀,到肉部后改刀垂直,往下剁。另一边重复,即可获得鱼头一枚。


把鱼身去骨:从断头处平刀贴着大脊骨,翻面再来一次。


到这一步时,你已经得到了:


再取一大片鱼肉,沿着鱼的脊椎骨,慢慢斜切下去,到图示位置,改垂直刀,就能去掉鱼身腹部的刺,得到肥厚的鱼身肉。

其实这已经是日本师傅片鱼的基本雏形了。


最后一步切鱼片:取净鱼身肉,斜片下刀,每片鱼切 2mm 左右厚。斜切到鱼皮处,就改为垂直下刀,把鱼皮切断。


得到一碗鱼肉:


等一会它们就这样了!


课后练习题二:切出像酒家一样打卷儿的青红丝

如下图,青椒和红椒、京葱白各取一手指的长度,宽度照图。京葱最简单:对半切开,去掉芯。


青红椒平刀去掉椒肉,留下外皮。


垂直下刀,切成青椒丝红椒丝和京葱丝。取一碗水,把丝放入泡一泡,这样最后放在鱼身上,就会自然弯曲。

你看研究员切得也挺粗的。但在厨房切丝,还是挺有乐趣的!


弯曲就是为了.......摆盘(发朋友圈)好看啊!

研究员的刀工还不够好,但也可以打卷儿!不断练习,越细越好看哦~
